Water tanks are constructed of welded, heavy-gauge stainless steel or cold-rolled steel. Heat is supplied by a burner assembly having multiple gas jets, which are focused on deflectors located around the lower side of the water tank. The deflectors concentrate the heat produced by the burners on the bottom of the water tank. The burner assembly can be configured for natural gas and propane as required by the customer. Each noodle cooker is equipped with a thermostat for precise temperature control. The thermostat is located near the centerline of the water tank for rapid response to changes in loads and to provide the most accurate temperature measurement.
